Recipe: Peanut Butter Sweet Bites

Craving something sweet? Sometimes you just can't kick those undeniable cravings - but I've found using natural sugars (honey or maple syrup) in a well balanced snack helps curtail them and avoid the sugar crash that always manages to hit me around 2pm each day!

Here's a no-brainer, super easy snack to use to help fuel your workouts, give you a little mid-morning or mid-afternoon pick-me-up, and add into your arsenal of recipes. We love it for pre- and post-runs too!

Makes 12 Servings

INGREDIENTS

  • 1 cup peanut butter (or any nut butter you prefer)
  • 1/3 cup honey
  • 1 egg
  • 2 tsp vanilla extract
  • 1/4 c. dark chocolate chips (I like Lily's)
  • 1/2 tsp baking soda

DIRECTIONS

  1. Preheat the oven to 350 degrees and coat a muffin tin with coconut spray.
  2. Soften your nut butter in the microwave for 30 seconds.
  3. Mix all the ingredients together, except the baking soda.
  4. Once the ingredients are mixed well, add the baking soda and stir well.
  5. Divide evenly into the 12 muffin pan slots.
  6. Bake for 12-13 minutes.
  7. Remove from heat and let sit for 3-5 minutes.
  8. Store in an airtight container or freeze and microwave for 15 seconds when you would like one.
