Broccoli is more than a versatile vegetable – it is a powerhouse of nutrition for expecting and new mothers, supporting various aspects of health during and after pregnancy. This green cruciferous vegetable is brimming with essential nutrients that cater to the increased demands of pregnancy and the postpartum period.
From its high levels of vitamins and minerals to its impressive antioxidant content, broccoli offers a wide range of health benefits that can significantly enhance the well-being of both the mother and the baby. Its nutrient profile includes critical components such as folate, essential for fetal development, and vitamin C, which boosts the immune system.
Additionally, the high fiber content in broccoli aids digestion, helping to alleviate common pregnancy-related digestive issues such as constipation. Beyond these benefits, broccoli's anti-inflammatory properties support overall health and can help manage the physical changes and demands placed on the body during pregnancy and the recovery phase post-birth. Incorporating broccoli into the diet can be a simple yet powerful way for mothers to ensure they are meeting their nutritional needs effectively.
Here's a crunchy broccoli salad that is perfect in this transition from late summer to early fall, and a great alternative to just "broccoli trees" (what my kids call steamed broccoli).
Makes 4 Servings
INGREDIENTS
- 4 cups broccoli florets, diced
- 1 cup carrot, grated
- 1/2 cup red onion, diced
- 1/2 cup apple, sliced

DIRECTIONS
- All all ingredients together & enjoy! Best chilled before serving.
Let me know when you try it and what your kiddos think!
